Healthy Quesadillas |

Ingredients: |
Whole grain wraps |
1/2 cup shredded cheese |
1/2 cup cooked shredded chicken |
1/4 cup black beans (optional) |
Handful of spinach |
How: |
Heat a nonstick pan over medium heat. |
Place one wrap in the pan, add fillings (cheese, chicken, beans, spinach). |
Top with another wrap or fold in half. |
Cook for 2–3 minutes each side until golden and cheese is melted. |
Cut into triangles for serving. |
Pita Pocket Pizzas |
No dough needed! |
Fun to let them build their own |
Ingredients: |
Wholemeal pita bread |
Tomato paste or pizza sauce |
Shredded cheese |
Toppings: ham, pineapple, olives, capsicum, mushrooms, etc. |
How: |
Preheat oven to 180°C (350°F). |
Spread tomato paste over pita. |
Add cheese and toppings. |
Place on baking tray. |
Bake for 10–12 minutes until cheese is melted and bubbly. |
Cool slightly, slice, and serve. |
Veggie-Packed Mac & Cheese |
Ingredients: |
1 cup whole wheat pasta |
1/2 cup broccoli or grated carrot |
1/2 cup milk |
1/2 cup grated cheese |
How: |
Cook pasta and veggies in the same pot. |
Drain, add milk and cheese, stir until creamy. |
Serve warm! |
Turkey & Cheese Pinwheels |
Ingredients: |
Wrap |
2 slices turkey |
1 slice cheese |
Lettuce |
How: |
Layer turkey, cheese, and lettuce on the wrap. |
Roll tightly. |
Slice into bite-sized pieces. |
Secure with toothpicks if needed. |
Mini Frittatas |
Ingredients: |
3 eggs |
1/4 cup milk |
Diced veggies (tomato, capsicum, spinach) |
Cheese |
How: |
Whisk eggs and milk. |
Pour into greased muffin tray. |
Add veggies and cheese. |
Bake at 180°C for 15–20 mins. |
Rice & Tuna Salad Bowls |
Ingredients: |
1 cup cooked brown rice |
1 small tin tuna |
1/4 cup corn |
1/4 cup cucumber, diced |
How: |
Mix all ingredients in a bowl. |
Add a dash of olive oil or mayo if desired. |
Serve cold. |
