Taco Night |
Ingredients: |
Minced beef or beans |
Taco seasoning |
Wraps or shells |
Toppings: lettuce, cheese, tomato |
How: |
Cook meat/beans with taco seasoning. |
Warm shells. |
Let kids build their own tacos! |
Stir Fry with Rice |
Ingredients: |
Chicken or Beef Strips |
Stir fry veggie mix (frozen works!) |
Soy sauce, garlic, honey |
How: |
Cook chicken, remove. |
Stir-fry veggies, return chicken. |
Add sauce (1 tbsp soy + 1 tsp honey). |
Serve with rice. |
Shepherd’s Pie |
Ingredients: |
500g beef mince |
1 cup frozen mixed veg |
2 cups mashed potato |
How: |
Cook beef & veg, season well. |
Pour into baking dish. |
Top with mashed potato. |
Bake at 180°C for 20 mins until golden. |
Veggie Fried Rice |
Ingredients: |
2 cups cooked rice |
1 egg |
Frozen peas/corn/carrots |
Soy sauce |
Feel free to add chicken or any protein |
How: |
Cook veggies, then push to the side of pan. |
Scramble egg in same pan. |
Add rice and soy sauce. |
Stir to combine. |
One-Pot Chicken Pasta |
Minimal dishes! |
Ingredients: |
1–2 chicken breasts, diced |
2 cups whole wheat pasta |
1 zucchini, chopped |
1/2 red capsicum, chopped |
1 jar tomato pasta sauce |
1/2 cup shredded cheese |
How: |
In a large pot, cook chicken over medium heat until browned. |
Add chopped zucchini and capsicum, cook for 2–3 minutes. |
Add uncooked pasta and pour in pasta sauce with about 1 cup water. |
Bring to a boil, then reduce to a simmer. |
Stir often and cook until pasta is tender (about 12–15 minutes). |
Sprinkle with cheese before serving. |
Hidden Veggie Bolognese |

Ingredients: |
500g beef mince |
1 onion, finely diced |
1 carrot, grated |
1 zucchini, grated |
1/2 cup mushrooms, finely chopped |
2 tbsp tomato paste |
1 can crushed tomatoes or pasta sauce |
How: |
In a large pan, cook mince and onion over medium heat until browned. |
Add grated carrot, zucchini, and mushrooms. |
Stir in tomato paste and cook for 1–2 minutes. |
Pour in crushed tomatoes or sauce. |
Simmer on low for 10–15 minutes. |
Serve over pasta, rice, or with toast soldiers. |
